What's For Dinner Tonight? Indian Chicken & Rice (FAST)

Because of our kids, dinner in our house isn’t ever too adventurous. That being said – tonight we’re having Indian Food! For some reason, our kids are totally fine with this sauce we get from Aldi’s.

Now, it’s no secret we are Aldi’s shoppers. I mean, inflation is bad all over, but at Aldi’s we seem to save the most on weekly groceries. And sauces like this are typically like $4-5 per jar. At Aldi, I think they’re between $3-4. And in our opinion, they taste better than a lot of the others at different stores.

Could we make our own? Probably. But in this instance, I’d rather just have the sauce ready that way we can whip it up quick. Plus, none of the ingredients in, let’s say, Tiki Masala are on our shopping list so we’d have to buy them all and the total cost would be more than the jar.

OK, on to the thing –

We start with a pack of boneless, skinless chicken thighs (usually 7-8 in a pack). Cut those up into bite size chunks and set aside. Next chop up one small yellow onion. Add a couple tablespoons of olive oil medium-high heated in a large pan, then thrown in the onions and cook them til they get clear-ish (about 2-3 min). Then add a few small scoops of minced garlic in there. Cook for about a minute and stir them up constantly to keep them from burning. Then, add your chicken chunks. Cook those all the way down. Then, just pour the jar into the pan, reduce heat to low and let that simmer for a bit (read instructions on label). That can sit for a while, so you’ve got time to make up some rice. We use Jasmine rice, but really any will do. When the rice is ready, scoop some into a bowl and put some chicken/sauce on top. That’s it.

Microwave up a bag of steamed veggies for the side and bam. That’s a meal, with leftovers.

(Hint – prob best to grab 2 jars. They can be the same OR mix and match, and just put half the chicken in a different pan and simmer the 2nd sauce in that one.
