Leftover rice could make you really sick. Turns out, that cooking rice doesn't completely get rid of all the pathogens that may be present, so let's say you're favorite restaurant make a big pot of rice and keeps serving from it all day, the pathogens like Bacillus cereus make still be present in the rice despite it being professionally prepared because it thrives at room temperature. One study has estimated that it's responsible for over 60,000 food poisoning cases per year.
Luckily, you can thwart it by getting your rice into the refrigerator less than 2 hours after preparing, but if the rice you're eating is already over 2 hours old, you might want to just toss it out!!
